After 25+ years as a chef, a heart attack taught me that better cooking is the best thing you can do for your health.

I've cooked professionally for 25 years, and 15 of those I spent founding and running my own cooking school here in Frederick, MD. I trained in NYC back in the 90's, all French technique, which means cheese, butter, and 44% fat heavy cream. It was glorious. And even though the years kept coming, my habits didn't change. Never trust a skinny chef…amiright?

Then, days after my 53rd birthday, I had a heart attack. And not just any heart attack, but a widowmaker.

It was an incredibly scary time.

Truthfully, it took a couple of years to come to terms with things. Once I did, I went and got certified through the American College of Culinary Medicine, and my capstone project was menopause and the Mediterranean diet. Then I spent months testing all of it in my own kitchen, on myself.

Yes, I lost some weight. But that's not the part I care about. My blood pressure came down. My cholesterol came down. My numbers turned around, and that's a bigger deal than anything the scale was ever going to tell me.

Here's what surprised me. Eating for your health doesn't mean starting a diet. It means becoming a better cook. A few new techniques, and a rhythm that fits your actual life.

I'm not into supplements or seed oil panic, and definitely no diet of the month. Instead, think olive oil, generously. Fish twice a week. Vegetables roasted hotter and longer than you think. Salt where it belongs.

That's what the Collective is built on.

THE RESEARCH

The Mediterranean diet isn't a trend. It's the most studied way of eating there is.

I didn't pick this way of eating because it was popular. I went looking for what actually holds up when you check it, and this is what was left standing. Then I ate it for two years and watched my own blood pressure and cholesterol come down. Here's what the research says about women in midlife specifically.

About 20% fewer hot flashes and night sweats

In more than 6,000 Australian women who'd been through menopause, the ones eating a Mediterranean-style diet were the least likely to report them.

About 30% fewer heart attacks and strokes

PREDIMED, the big Spanish trial: people already at high cardiovascular risk who ate a Mediterranean diet with olive oil or nuts had roughly a third fewer major cardiovascular events than the group eating low fat.

Probably mood, blood pressure and blood sugar too

The European Menopause and Andropause Society went through the research and says a Mediterranean diet looks like it helps with all three. Their word is "may." So mine is too.

Worth saying plainly: this is a way of eating, not a treatment. It isn't a substitute for talking to your doctor about menopause, and I'm never going to tell you it is. What it is, is the most enjoyable set of instructions anybody's ever going to hand you about your own health.
