Dutch Baby for One
Just because you're cooking for one doesn't mean you don't deserve a nice breakfast! I mixed together this Dutch Baby for One in less time then it took to preheat the oven. Here's the recipe:
1 large egg
3 T. Flour
3 T. milk
1 t. sugar
1 T. butter
pinch of salt
Preheat your oven to 425-degrees.
Place a 6" cast iron skillet or cake pan into the oven.
In a small or medium bowl, beat the egg with a whisk, then add the flour and whisk until smooth. Add in the milk, sugar, & salt and whisk again until smooth.
Add the butter to the hot skillet in the oven and heat until the butter is melted.
Remove the pan from the oven and pour in the batter. Immediately place back in the oven and cook for 12 minutes, or until golden and puffy.
Serve immediately, and know that this will quickly deflate as it sets. Dust with a healthy amount of powdered sugar or top with berries or a fruit compote, or even smear with a bit of jam. Treat yourself!
